The Holiday Drink – How to Make It

WHere is a simplified interpretation of a drink from the seasonal menu. It's a large-volume pre-mixed which is loaded with the tastes of a holiday season, which makes it perfect for your celebration. Any leftover syrup for breakfast cocktails, desserts, or for another batch of the drink.

The Bikini Cocktail

Yields 10 servings

To make the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Cocktail (yields 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

To prepare the Citrus Syrup: Place the listed components into a saucepan, bring to a light boil, agitating to dissolve. After that, turn off the burner allowing it to cool entirely. Pour to a sterilised bottle, cap it keeping it in the fridge, where it will keep for up to four weeks.

Preparing the Batch Mix: Pour every spirits and syrup into one big jug, leave to sit for an hour, then filter it best through muslin, to ensure it's perfectly clear.

To serve: Add 85ml of the premix into a cocktail shaker packed with ice, and agitate lightly for one minute to cool it down. Pour into an chilled martini glass or similar, top with a few cranberries and finish by giving it a quick spritz of mandarin oil over the top.
